Healthy Crockpot Cashew Chicken




Here we go friends!  Time to start another week!  Yesterday was spent in my comfiest clothes, with my sweetest munchkins, catching up on messages and prepping for a successful week ahead.  So let's get it going!  

One of the things I love to do on Sundays is set the crock pot up with something hearty and delicious.  Something to warm the soul on a rainy, winter day, and also that I can use to meal prep lunches for the week ;)  A busy, working mama has no time to mess around, so if I'm going to fix a meal, it better be good more than once!  




This crock pot cashew chicken is one of my favorite go-to recipes and one of my husband's favorites as well!  Heck, even the twins were shoveling it in (I just made sure to remove any specks of red pepper from theirs before I gave it to them).

Go ahead and give it a go, then share with friend as well!


Ingredients:
2-3 lbs. chicken breasts, sliced into pieces
1/4 cup flour
Black pepper to taste
1 tbsp. vegetable oil
1/4 cup low sodium soy sauce
2 tbsp. ketchup
2 tbsp. vinegar
1 tbsp. brown sugar
sprinkle of red pepper flakes
sprinkle of garlic powder

Directions: 

1. Coat chicken pieces with flour and black pepper and sautee in oiled pan until white on all sides.

2. Place chicken in crock pot and cover with remaining ingredients EXCEPT for cashews.

3. Cook on low 3-4 hours (or you can do high for an hour and a half) stirring every once in a while.

4. Add cashews at the very end.  Stir and serve over brown rice with broccoli or your favorite veggie!
