To be honest, I actually bought this beef pre-sliced specifically for stir fry on a whim because I knew that chicken was going to get old fast and also because the entire meat section (specifically cuts of beef) overwhelms and bewilders me so I tend to avoid it altogether. This looked pretty fool proof and the packaging confirmed for me that I should use it for this purpose, so here I went mixing and messing with the rest of my kitchen ingredients.
I first mixed a couple tablespoons of cornstarch with an equal amount of water and a dash of garlic powder and coated all of the beef in this mixture. In hindsight, if I do this again, I will simply toss the beef in some cornstarch like I do with my crockpot cashew chicken because honestly the water was making it a little too saucy for my liking. Then I cooked the beef in a skillet with a drizzle of olive oil until it was cooked through.
Next, I moved the beef out of the skillet into a separate bowl. I put the broccoli and a drizzle more oil into the pan. I cooked this for a while because I tend to like my broccoli the same way I like my marshmallows - a little burnt on the outside - but you might want to keep a better eye on things if you don't want yours this well done.
Note: I DO recommend getting like sized meal prep containers for sake of your own sanity, and I have mine ordered and on the way, but no matter how many times I buy a new pack, they disappear without fail and here I am again with mismatched Tupperware. They're surely hanging around with the missing socks and bobby pins in the land of disappearing items.
Ingredient List:
1 lb. sliced beef
raw, fresh broccoli
cornstarch
garlic powder
soy sauce
brown sugar
brown rice (for serving with)
Simple directions:
1. Toss beef in 2 tbsp. cornstarch and a sprinkle of garlic powder and saute in pan (with a drizzle of olive oil) until cooked through. Remove beef from pan and set aside.
2. Add another drizzle of oil and broccoli to the same pan. Saute until cooked through.
3. Add the beef back into the pan WITH the broccoli. In a separate bowl, mix 1/3 cup soy sauce with 2 tbsp. brown sugar to make the sauce and pour it over top of the beef and broccoli.
4. Simmer everything for a few minutes and serve over brown rice!
